Chicken Satay w/ Peanut Ginger Sauce

CHICKEN SATAY RECIPE
Serves 4

INGREDIENTS
½ cup soy sauce
¼ cup lime juice
¼ cup water
3 tbsp maple syrup
2 tbsp sesame oil
1 tsp chili flakes
3 lbs chicken tenders (or about 12 tenders)
12 bamboo skewers (optional)

DIRECTIONS
 1. Combine the soy sauce, lime juice, water, syrup, sesame oil and chili flakes to make a marinade. 

2. Mix the chicken tenders with the marinade and let them sit for 30 minutes at room temperature, or up to 1hr in the fridge. 

3. Remove chicken tenders from the marinade and skewer. Grill on medium-high for 2-3 minutes per side, until cooked all the way through.

4. Serve with Peanut Ginger Dipping Sauce.

 

PEANUT GINGER SAUCE
Makes about 1 ¼ cups

INGREDIENTS
2 garlic cloves
1” ginger, peeled and chopped
½ cup creamy peanut butter
½ cup coconut milk
1 ½ tbsp maple syrup
1 tbsp soy sauce
1 tbsp lime juice
1 tsp sesame oil

DIRECTIONS
1. Combine all the ingredients in a blender and puree until smooth. 

2. Serve with Chicken Satay. It’s also delicious with steamed veggies like broccoli or green beans.
